Terazo Restaurant and Bar and Kafe Batan Waru, we know good
cooking is impossible to achieve without select ingredients.

Seafood:
Our daily trips to the Jimbaran fish market on Bali's South
coast mean your fish and seafood have been hand-selected for
freshness and quality. For big game fish not available from
the small-scale fishermen who haunt Jimbaran, we turn to several
reputable seafood suppliers who service not only the local
market, but export as well. We also purchase some of our seafood
live and hold it in our salt water tank in TeraZo. It's no
wonder the Italian Fisherman's Stew is so fresh. Meanwhile,
salmon, ocean trout, oysters, mussels, and other treats from
cooler seas are air-flown from nearby Australia.
Vegetables:
Unsprayed vegetables are increasingly available in Bali, thanks
to the grassroots efforts of several small companies. TeraZo
and Batan waru are proud to offer a selection of fresh vegetables
from Big Tree Organics, whose farms of mineral-rich volcanic
soil high in the hills of Bali supply some of the best tables
on the island. Though more costly, these crops offer incredible
flavor, freshness, and health benefits to our bodies and our
soil. Spending a bit more to bring these superior products
to you is an investment we are happy to make.
We also have our own small gardens where we grow fresh herbs,
and our land near Kintamani supplies us not only with unsprayed
red rice, but also wild mountain fern tips.
Teas:
TeraZo proudly serves Darma Fine Teas, imported in bulk from
around the globe and packaged here in Bali. The superior flavor
of these teas and herbal brews is evident from the first sip.
Coffee: At Batan Waru and TeraZo, our coffee beans
hail from a small roasting operation in Java that has been
in business since the 1920's. What's their secret? German
roasting equipment, decades of skill, and aging the beans
for seven years prior to roasting!
Staff purveyors: We encourage staff to develop their
own cottage industries and become suppliers at both Batan
Waru and TeraZo. Pak Karsa, hot cook at TeraZo, raises ducks
to meet our size and quality standards. On any given day,
you'll see the husband and adorable daughter of waitress Ibu
Wayan Widniani delivering oranges. And our young coconuts
come from Batan Waru hot cook, Wayan Suwira.
Imported
Products: As much as we like to rely on locally grown
and raised ingredients, there are just some things for which
there are no substitutes. Bali is fortunate to have many hard-working
and reliable importers who bring in what we need.
Chilled tender lamb, beef, and seafood you have to pay a serious
premium for in the Northern hemisphere are also flown in from
Australia several times a week. The list goes on, and it reflects
our commitment to procuring the best ingredients possible.
